BLT Tacos
Sweet Potato Waffle Fries
Ingredients
- 1 (16-oz) pkg bacon
- 12 crunchy taco shells
- 2 cups chopped baby spinach (or use shredded iceberg lettuce)
- 3 Roma tomatoes, chopped (optional)
- ½ cup Ranch dressing
- 2 avocados, chopped
Instructions
- Cook bacon, in batches, in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Cut bacon slices in half.
- Heat taco shells according to package directions. Divide bacon, spinach, and, if desired, tomatoes among taco shells. Drizzle with Ranch dressing, and top with chopped avocado.

- 2 (20-oz) pkg frozen sweet potato waffle fries (or sweet potato crinkle cut fries)
- Ranch dressing (or use ketchup)
Side Dish Instructions
- Bake fries according to package directions. Serve with Ranch for dipping.
