BLT Tacos

Sweet Potato Waffle Fries

Ingredients

  • 1 (16-oz) pkg bacon
  • 12 crunchy taco shells
  • 2 cups chopped baby spinach (or use shredded iceberg lettuce)
  • 3 Roma tomatoes, chopped (optional)
  • ½ cup Ranch dressing
  • 2 avocados, chopped

Instructions

  1. Cook bacon, in batches, in a large skillet over medium-high heat 6 to 8 minutes or until crisp. Cut bacon slices in half.
  2. Heat taco shells according to package directions. Divide bacon, spinach, and, if desired, tomatoes among taco shells. Drizzle with Ranch dressing, and top with chopped avocado.

Side Dish Ingredients

  • 2 (20-oz) pkg frozen sweet potato waffle fries (or sweet potato crinkle cut fries)
  • Ranch dressing (or use ketchup)

Side Dish Instructions

  1. Bake fries according to package directions. Serve with Ranch for dipping.
