Veggie Burger Easy Weeknight Wraps

Ingredients

  • 2 (9-oz) pkg frozen veggie burgers
  • ½ small onion, finely chopped
  • 1 red bell pepper, chopped
  • 1 cup fresh or frozen corn, thawed
  • 1 Tbsp olive oil
  • ¾ cup refried beans
  • 6 soft taco-size flour tortillas, heated
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Cook veggie burgers according to package directions; cool slightly, and chop.
  2. Sauté onion, bell pepper, and corn in hot oil in a nonstick skillet until tender. Season with salt and pepper to taste.
  3. Heat refried beans 30 seconds in microwave. Spoon refried beans down center of each tortilla.
  4. Distribute chopped burgers and sautéed vegetables among tortillas. Sprinkle with cheese; roll up tightly. Serve with ketchup.

Side Dish Ingredients

  • 1 cup blueberries
  • 3 peaches, peeled and cut up in small chunks
  • 1 tsp sugar
  • ½ lime

Side Dish Instructions

  1. Toss together berries, peaches, and sugar in a bowl. Drizzle with lime.
