Ingredients

  • 4 slices center-cut bacon
  • 4 large eggs, lightly beaten
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 tsp olive oil
  • ⅓ cup reduced-fat mayonnaise
  • 3 Tbsp chopped fresh basil
  • 2 tsp fresh lemon juice
  • 8 (1-oz) slices whole wheat bread, toasted
  • 4 butter lettuce leaves
  • 2 tomatoes, sliced

Instructions

  1. Place 4 slices bacon on a paper towel-lined plate; microwave on High 1½ to 2 minutes or until crisp.
  2. Meanwhile, whisk together eggs, ⅛ tsp salt and ⅛ tsp pepper.
  3. Heat oli in a small nonstick skillet over low heat.
  4. Add eggs to skillet; cook 7 minutes or until eggs are set, stirring gently.
  5. Combine mayonnaise, basil, lemon juice; spread evenly over bread slices.
  6. Top 4 bread slices with lettuce, eggs, tomato, ⅛ tsp salt, ⅛ tsp pepper and bacon; cover with remaining bread slices.
