Ingredients
- 4 slices center-cut bacon
- 4 large eggs, lightly beaten
- ¼ tsp salt
- ¼ tsp pepper
- 1 tsp olive oil
- ⅓ cup reduced-fat mayonnaise
- 3 Tbsp chopped fresh basil
- 2 tsp fresh lemon juice
- 8 (1-oz) slices whole wheat bread, toasted
- 4 butter lettuce leaves
- 2 tomatoes, sliced
Instructions
- Place 4 slices bacon on a paper towel-lined plate; microwave on High 1½ to 2 minutes or until crisp.
- Meanwhile, whisk together eggs, ⅛ tsp salt and ⅛ tsp pepper.
- Heat oli in a small nonstick skillet over low heat.
- Add eggs to skillet; cook 7 minutes or until eggs are set, stirring gently.
- Combine mayonnaise, basil, lemon juice; spread evenly over bread slices.
- Top 4 bread slices with lettuce, eggs, tomato, ⅛ tsp salt, ⅛ tsp pepper and bacon; cover with remaining bread slices.
