Toasted Gnocchi and Vegetables
Ingredients
- 2 (16-oz) pkg gnocchi
- 2 (12-oz) pkg chopped broccoli, cauliflower, and carrots
- ⅓ cup butter, melted
- 1 pint multicolored grape tomatoes, halved
- 1 jar pesto
Instructions
- Preheat oven to 450°F. Toss together gnocchi, vegetables, and melted butter on a large rimmed baking sheet; spread in a single layer. Lightly season with salt and pepper.
- Bake 20 minutes or until gnocchi are toasted and vegetables are browned and tender. Stir in tomatoes and pesto; toss.
