Easy Chickpea Tikka Masala

Ingredients

  • 1 onion, chopped
  • 2 (15-oz) cans chickpeas, drained and rinsed
  • 1 (15-oz) jar tikka masala simmer sauce
  • 2 (3.5-oz) pouches boil-in-bag basmati rice
  • 1½ cups cashews
  • 6 Tbsp chopped fresh cilantro (optional)

Instructions

  1. Cook onion in a large saucepan or Dutch oven coated with cooking spray over medium-high heat 5 minutes or until tender.
  2. Add chickpeas and simmer sauce; reduce heat to medium, and simmer 10 minutes, stirring occasionally.
  3. Meanwhile, cook rice according to package directions. Serve chickpea mixture over rice; sprinkle with nuts and, if desired, cilantro.
