Lemon-Oregano Salmon

Ingredients

  • 6 (6-oz) salmon fillets
  • 3 Tbsp olive oil, divided
  • 1 lemon, zested and juiced
  • 1 Tbsp chopped fresh oregano

Instructions

  1. Lightly season salmon with salt and pepper. Cook salmon in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 4 minutes per side or to desired doneness.
  2. Stir together 2 Tbsp oil, lemon zest, lemon juice, and oregano. Spoon over salmon.

Side Dish Ingredients

  • 1 (16-oz) pkg orzo
  • 2 zucchini, thinly sliced
  • 1 pint grape tomatoes, halved
  • ¼ cup chopped fresh basil
  • 1 cup Greek vinaigrette

Side Dish Instructions

  1. Cook pasta according to package directions, adding zucchini during last 2 minutes of cooking; drain and rinse with cold water.
  2. Place pasta mixture in a large bowl; add tomatoes, basil, and vinaigrette. Toss, and season to taste.
