Roast Beef Sandwiches with Horseradish Sauce

Ingredients

  • ½ cup sour cream
  • 2 Tbsp prepared horseradish
  • 2 Tbsp milk
  • ¼ tsp dried thyme
  • 1½ lb sliced roast beef
  • 6 hamburger buns (preferably whole wheat)
  • 2 cups baby arugula

Instructions

  1. Stir together sour cream, horseradish, milk, and thyme in a bowl. Serve beef on buns with horseradish sauce and arugula.

Side Dish Ingredients

  • 3 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • ½ tsp pepper
  • ¼ tsp salt
  • 4 large tomatoes, cut into large chunks
  • 1 zucchini, halved and thinly sliced
  • ½ cup sliced red onion
  • 3 Tbsp chopped fresh basil

Side Dish Instructions

  1. Whisk together oil, vinegar, mustard, pepper, and salt in a large bowl. Add tomatoes, zucchini, onion, and basil; toss.
