Roast Beef Sandwiches with Horseradish Sauce
Summer Tomato SaladIngredients
- ½ cup sour cream
- 2 Tbsp prepared horseradish
- 2 Tbsp milk
- ¼ tsp dried thyme
- 1½ lb sliced roast beef
- 6 hamburger buns (preferably whole wheat)
- 2 cups baby arugula
Instructions
- Stir together sour cream, horseradish, milk, and thyme in a bowl. Serve beef on buns with horseradish sauce and arugula.

- 3 Tbsp olive oil
- 1 Tbsp apple cider vinegar
- 1 tsp Dijon mustard
- ½ tsp pepper
- ¼ tsp salt
- 4 large tomatoes, cut into large chunks
- 1 zucchini, halved and thinly sliced
- ½ cup sliced red onion
- 3 Tbsp chopped fresh basil
Side Dish Instructions
- Whisk together oil, vinegar, mustard, pepper, and salt in a large bowl. Add tomatoes, zucchini, onion, and basil; toss.
