Sheet Pan Fajita Lettuce Wraps

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 (12-oz) pkg sliced bell pepper and onion medley
  • 4 Roma tomatoes, cut lengthwise into wedges
  • ¼ cup olive oil
  • 3 Tbsp fajita seasoning mix
  • 2 romaine lettuce hearts, separated into leaves
  • 2 limes, cut into wedges

Instructions

  1. Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; cut lengthwise into strips.
  3. Toss together chicken, bell pepper medley, tomatoes, oil, and seasoning in a large bowl. Carefully spread mixture in a single layer on preheated baking sheet.
  4. Bake 20 minutes or until chicken is done and vegetables are tender. Serve in lettuce leaves with lime wedges.
