Cheesy Pork and Potato Casserole

- 6 (1-inch-thick) boneless pork chops
- 2 Tbsp olive oil
- 1 (28-oz) pkg frozen O'Brien potatoes, thawed
- 1 (10.5-oz) can cream of mushroom soup
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 (8-oz) carton sour cream
Instructions
- Preheat oven to 400°F. Sprinkle pork lightly with salt and pepper. Cook pork chops in hot oil in a large skillet over medium-high heat until browned. Remove from skillet.
- Meanwhile, stir together potatoes, soup, cheese, and sour cream in a large bowl; season with salt and pepper. Spoon mixture into a lightly greased 13-x 9-inch baking dish.
- Nestle pork chops in potato mixture; cover and bake 40 to 45 minutes or until pork chops are tender and potatoes are hot and bubbly.

- Preheat oven to 400°F. Toss together beans and oil on a large rimmed baking sheet. Season lightly with salt and pepper.
