Vegetable Paella

Ingredients

  • 2 cups chopped onion
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 Tbsp olive oil
  • 2 (5-oz) pkg yellow rice
  • 2 tsp smoked paprika (or use regular)
  • 3½ cups vegetable broth
  • 1 pint grape tomatoes, halved
  • 1 (6.5-oz) jar marinated artichoke quarters, drained
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp lemon juice
  • 1 (16-oz) pkg frozen sweet peas, thawed

Instructions

  1. Cook onion, bell pepper, and garlic in hot oil in a large, deep skillet 3 minutes. Add rice and paprika; cook 1 minute. Stir in broth, tomatoes, artichokes, salt, and pepper; bring to a simmer. Reduce heat; cover and cook 15 minutes.
  2. Stir in lemon juice and peas; cover and cook 10 minutes or until liquid is absorbed.

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil
  • ¼ tsp salt

Side Dish Instructions

  1. Steam broccoli in a steamer basket over boiling water 3 to 4 minutes or until tender. Toss with oil and salt.
