Vegetable Paella
Steamed BroccoliIngredients
- 2 cups chopped onion
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 2 Tbsp olive oil
- 2 (5-oz) pkg yellow rice
- 2 tsp smoked paprika (or use regular)
- 3½ cups vegetable broth
- 1 pint grape tomatoes, halved
- 1 (6.5-oz) jar marinated artichoke quarters, drained
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp lemon juice
- 1 (16-oz) pkg frozen sweet peas, thawed
Instructions
- Cook onion, bell pepper, and garlic in hot oil in a large, deep skillet 3 minutes. Add rice and paprika; cook 1 minute. Stir in broth, tomatoes, artichokes, salt, and pepper; bring to a simmer. Reduce heat; cover and cook 15 minutes.
- Stir in lemon juice and peas; cover and cook 10 minutes or until liquid is absorbed.

- 2 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
- ¼ tsp salt
Side Dish Instructions
- Steam broccoli in a steamer basket over boiling water 3 to 4 minutes or until tender. Toss with oil and salt.
