Slow Cooker Bacon Potato Chowder

Ingredients

  • 4 slices bacon, cooked and crumbled
  • 1 large onion, chopped (about 1 cup)
  • 4 cans (10½-oz each) condensed cream of potato soup
  • 4⅓ cups milk
  • ¼ tsp ground black pepper
  • 2 large white potatoes (about 1 lb), peeled and cut into ½-inch pieces (about 3 cups)
  • ½ cup chopped fresh chives
  • 2 cups shredded Cheddar cheese (about 8 oz)

Instructions

  1. Stir the bacon, onion, soup, milk, black pepper and potatoes and ¼ cup chives in a 6-quart slow cooker.
  2. Cover and cook on HIGH for 3 to 4 hours or until the potatoes are tender.
  3. Add the cheese and stir until the cheese is melted. Sprinkle with the remaining chives.
