Slow Cooker Chicken Cacciatore

Garlic Egg Noodles and Broccoli

Ingredients

  • 1½ lb boneless, skinless chicken breasts, cut into 3-inch pieces
  • ½ tsp salt
  • ½ tsp pepper
  • 2 red onions, sliced
  • 2 red or green bell peppers, sliced
  • 2 (14.5-oz) can fire-roasted diced tomatoes
  • 4 cloves garlic, minced
  • ½ tsp crushed red pepper

Instructions

  1. Sprinkle chicken with salt and pepper. Place in a 5-quart slow cooker coated with cooking spray.
  2. Top with onion, bell pepper, tomatoes, garlic, and red pepper. Cover and cook on LOW 6 to 7 hours.
  3. Serve over Garlic Egg Noodles.

Side Dish Ingredients

  • 6 oz yolk-free egg noodles
  • 3 Tbsp extra virgin olive oil, divided
  • 2 cloves garlic, minced
  • ¾ tsp salt, divided
  • 2 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Cook noodles according to package directions. Toss hot noodles with 2 Tbsp oil, garlic and ½ tsp salt.
  2. Arrange broccoli in a steamer basket over boiling water. Cover and steam 3 to 4 minutes or until tender.
  3. Drizzle 1 Tbsp oil over broccoli, and sprinkle with ¼ tsp salt.
