Slow Cooker Chicken Cacciatore
Garlic Egg Noodles and Broccoli
Ingredients
- 1½ lb boneless, skinless chicken breasts, cut into 3-inch pieces
- ½ tsp salt
- ½ tsp pepper
- 2 red onions, sliced
- 2 red or green bell peppers, sliced
- 2 (14.5-oz) can fire-roasted diced tomatoes
- 4 cloves garlic, minced
- ½ tsp crushed red pepper
Instructions
- Sprinkle chicken with salt and pepper. Place in a 5-quart slow cooker coated with cooking spray.
- Top with onion, bell pepper, tomatoes, garlic, and red pepper. Cover and cook on LOW 6 to 7 hours.
- Serve over Garlic Egg Noodles.
Side Dish Ingredients
- 6 oz yolk-free egg noodles
- 3 Tbsp extra virgin olive oil, divided
- 2 cloves garlic, minced
- ¾ tsp salt, divided
- 2 (12-oz) pkg broccoli florets
Side Dish Instructions
- Cook noodles according to package directions. Toss hot noodles with 2 Tbsp oil, garlic and ½ tsp salt.
- Arrange broccoli in a steamer basket over boiling water. Cover and steam 3 to 4 minutes or until tender.
- Drizzle 1 Tbsp oil over broccoli, and sprinkle with ¼ tsp salt.
