Balsamic-Blueberry Sauce Pork Chops

Ingredients

  • 1 lb boneless center cut loin pork chops
  • 1½ tsp dried crushed rosemary
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 cup blueberries
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp honey

Instructions

  1. Sprinkle pork lightly with salt and pepper; rub with rosemary and garlic.
  2. Cook pork in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done.
  3. Remove from pan, and keep warm.
  4. Add blueberries, vinegar, and honey to skillet. Cook 4 to 6 minutes or until sauce is slightly thickened, stirring occasionally.
  5. Spoon sauce over pork.

Side Dish Ingredients

  • 1 large yellow squash, cut lengthwise into ½-inch-thick planks
  • 1 large zucchini, cut lengthwise into ½-inch-thick planks
  • 1 Tbsp olive oil
  • 1 tsp lemon zest

Side Dish Instructions

  1. Preheat grill or grill pan to high medium-high heat. Toss together squash, zucchini, oil, and desired amount of salt and pepper.
  2. Grill, covered, 2 minutes per side or until crisp-tender.
  3. Sprinkle with lemon zest.
