Balsamic-Blueberry Sauce Pork Chops
Grilled Lemon Squash Medley
Ingredients
- 1 lb boneless center cut loin pork chops
- 1½ tsp dried crushed rosemary
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1 cup blueberries
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
Instructions
- Sprinkle pork lightly with salt and pepper; rub with rosemary and garlic.
- Cook pork in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes per side or until done.
- Remove from pan, and keep warm.
- Add blueberries, vinegar, and honey to skillet. Cook 4 to 6 minutes or until sauce is slightly thickened, stirring occasionally.
- Spoon sauce over pork.
Side Dish Ingredients
- 1 large yellow squash, cut lengthwise into ½-inch-thick planks
- 1 large zucchini, cut lengthwise into ½-inch-thick planks
- 1 Tbsp olive oil
- 1 tsp lemon zest
Side Dish Instructions
- Preheat grill or grill pan to high medium-high heat. Toss together squash, zucchini, oil, and desired amount of salt and pepper.
- Grill, covered, 2 minutes per side or until crisp-tender.
- Sprinkle with lemon zest.
