Balsamic Onion Smothered Burgers

Ingredients

  • 2 lb ground beef
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 red onions, halved and thinly sliced
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 2 cups spring mix
  • 1 (4-oz) pkg goat cheese, crumbled

Instructions

  1. Combine beef, garlic, salt, and pepper; shape into 6 patties.
  2. Heat a grill pan or a large nonstick skillet coated with cooking spray over medium-high heat. Cook patties, in batches if necessary, 4 to 5 minutes per side or until no longer pink.
  3. Meanwhile, cook onions in hot oil in a large skillet over medium heat, stirring occasionally, 10 minutes or until tender. Stir in vinegar; cook 1 minute or until vinegar evaporates.
  4. Divide salad greens among 6 plates; top each with a patty, onions, and cheese.

Side Dish Ingredients

  • 2 lb asparagus, trimmed
  • ½ cup sliced almonds
  • 3 Tbsp butter, melted
  • ½ tsp kosher salt

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together asparagus, nuts, melted butter, and salt on a parchment paper-lined rimmed baking sheet.
  2. Bake 8 minutes or until nuts are browned and asparagus is slightly blistered.
