Shrimp Tikka Masala

Ingredients

  • 1 lb peeled and deveined, large raw shrimp
  • 1 Tbsp olive oil
  • ¾ cup tikka masala simmer sauce (see Note)
  • ½ (5.3-oz) carton Greek yogurt
  • 3 Tbsp chopped fresh cilantro 

Instructions

  1. Cook shrimp in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until shrimp turn pink. Remove shrimp from skillet.
  2. Add simmer sauce to skillet; reduce heat, and simmer until thoroughly heated. Stir in shrimp.
  3. Top with yogurt and cilantro.

Side Dish Ingredients

  • 1 (10-oz) pkg frozen riced cauliflower 
  • 1 Tbsp chopped fresh cilantro
  • 1½ tsp olive oil (or use coconut oil)
  • ½ tsp salt
  • ¼ tsp pepper 

Side Dish Instructions

  1. Microwave cauliflower according to package directions. Stir in remaining ingredients.
