Mini Bacon-Mushroom Meat Loaves
Skillet Asparagus
Ingredients
- 2 slices bacon
- 1 (8-oz) pkg sliced mushrooms
- ½ small onion, chopped
- 1 clove garlic, minced
- ½ Tbsp balsamic vinegar
- ½ Tbsp fresh thyme (or use ½ tsp dried thyme)
- 1 large egg, lightly beaten
- ½ tsp salt
- ½ tsp pepper
- ¾ lb ground beef
Instructions
- Preheat oven to 450°F. Cook bacon in a nonstick skillet over medium heat until crisp. Drain, reserving 1 Tbsp drippings in skillet. Break bacon into 1-inch pieces.
- Chop mushrooms. Cook mushrooms, onion, and garlic in hot drippings in skillet 10 minutes or until tender; transfer to a large bowl.
- Stir in vinegar, thyme, egg, salt, and pepper; add beef, and gently combine. Form mixture into 3 small loaves, and place on a greased baking sheet.
- Bake 20 minutes or until centers are no longer pink. Sprinkle with bacon.

- ¾ lb asparagus, trimmed
- ¼ tsp salt
Side Dish Instructions
- Heat oil in a large skillet over medium heat; add garlic, and cook 1 minute. Stir in asparagus; cover and cook 2 minutes. Sprinkle with salt.
