Hawaiian Chicken Bowls
Ingredients
- 2 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 red bell peppers, cut into wedges
- 1 onion, cut into wedges
- 1 (12-oz) bottle Hawaiian marinade
- 3 (8.8-oz) pouches microwavable rice
- 1 (15-oz) can black beans, rinsed and drained
- 1 (10-oz) pkg sliced mango
- 2 avocados, sliced
Instructions
- Preheat oven to 425°F. Toss together chicken, bell peppers, onion, and 1 cup Hawaiian marinade on a large rimmed baking sheet; spread in a single layer. Bake 20 minutes or until chicken is done.
- Meanwhile, heat rice according to package directions; divide among 6 shallow bowls. Top with chicken mixture, mango, and avocado .
