Slow Cooker Chicken Cacciatore
Garlic Egg Noodles and Broccoli
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 3-inch pieces
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 red onion, sliced
- 1 red or green bell pepper, sliced
- 1 (14.5-oz) can fire-roasted diced tomatoes
- 2 cloves garlic, minced
- ½ tsp crushed red pepper
Instructions
- Sprinkle chicken with salt and pepper. Place in a 3-quart slow cooker coated with cooking spray.
- Top with onion, bell pepper, tomatoes, garlic, and red pepper. Cover and cook on LOW 6 to 7 hours.
- Divide into 4 servings; serve 2 servings over Garlic Egg Noodles. Freeze remaining 2 servings for a later use.
Side Dish Ingredients
- 2 oz yolk-free egg noodles
- 1 Tbsp extra virgin olive oil, divided
- 1 clove garlic, minced
- ¼ tsp salt, divided
- 3 cups broccoli florets
Side Dish Instructions
- Cook noodles according to package directions. Toss hot noodles with 2 tsp oil, garlic and ⅛ tsp salt.
- Arrange broccoli in a steamer basket over boiling water. Cover and steam 3 to 4 minutes or until tender. Drizzle 1 tsp oil over broccoli, and sprinkle with ⅛ tsp salt.
