Pork Chops with Chipotle Cream

Ingredients

  • 2 (4-oz) boneless center cut pork loin chops, trimmed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup reduced-fat sour cream
  • 1 tsp extra virgin olive oil
  • ½ canned chipotle pepper, finely chopped
  • ½ lime
  • 2 Tbsp finely chopped green onion

Instructions

  1. Heat a skillet coated with cooking spray over medium-high heat. Sprinkle both sides of pork with salt and pepper. Cook pork 4 minutes per side or until done.
  2. Meanwhile, stir together sour cream, oil, and chipotle pepper.
  3. Squeeze lime juice over pork. Top with sauce, and sprinkle with green onion.

  • ½ lb green beans, ends trimmed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 tsp canola oil
  • 1 clove garlic, minced
  • 1⅓ cups prepared mashed sweet potatoes

Side Dish Instructions

  1. Sauté green beans, salt, and pepper in hot oil in a nonstick skillet over medium-high heat 5 to 6 minutes or until beans are crisp-tender.
  2. Add garlic, and cook 30 seconds, stirring constantly.
  3. Meanwhile, place potatoes in a microwave-safe bowl; microwave on HIGH 2 to 3 minutes or until thoroughly heated, stirring once.
