Pork Chops with Chipotle Cream
Garlic Green Beans and Mashed Sweet Potatoes
Ingredients
- 2 (4-oz) boneless center cut pork loin chops, trimmed
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup reduced-fat sour cream
- 1 tsp extra virgin olive oil
- ½ canned chipotle pepper, finely chopped
- ½ lime
- 2 Tbsp finely chopped green onion
Instructions
- Heat a skillet coated with cooking spray over medium-high heat. Sprinkle both sides of pork with salt and pepper. Cook pork 4 minutes per side or until done.
- Meanwhile, stir together sour cream, oil, and chipotle pepper.
- Squeeze lime juice over pork. Top with sauce, and sprinkle with green onion.

- 1 tsp canola oil
- 1 clove garlic, minced
- 1⅓ cups prepared mashed sweet potatoes
Side Dish Instructions
- Sauté green beans, salt, and pepper in hot oil in a nonstick skillet over medium-high heat 5 to 6 minutes or until beans are crisp-tender.
- Add garlic, and cook 30 seconds, stirring constantly.
- Meanwhile, place potatoes in a microwave-safe bowl; microwave on HIGH 2 to 3 minutes or until thoroughly heated, stirring once.
