Greek Steak Lettuce Wraps

Ingredients

  • ½ lb top sirloin steak
  • ½ Tbsp Greek seasoning
  • 1½ Tbsp olive oil
  • 4 romaine lettuce leaves
  • ¼ cup sliced cucumber
  • ⅓ cup grape tomatoes, halved
  • ¼ small red onion, thinly sliced
  • 6 Tbsp refrigerated tzatziki-Ranch Greek yogurt dressing 
  • ¼ cup crumbled feta cheese

Instructions

  1. Sprinkle steak with seasoning. Cook in hot oil in a large cast-iron skillet over medium-high heat 6 to 8 minutes per side or to desired doneness. Remove from skillet; let stand 10 minutes before slicing across the grain.
  2. Arrange lettuce in 2 stacks; top with steak, cucumber, tomatoes, onion, dressing, and cheese.

Side Dish Ingredients

  • ½ (12-oz) pkg frozen cauliflower rice
  • 2½ Tbsp olive bruschetta topping 
  • 1 Tbsp chopped fresh mint
  • ⅛ tsp garlic salt

Side Dish Instructions

  1. Cook cauliflower rice according to package directions. Stir in bruschetta topping, mint, and garlic salt.
