Creamy Tomato-Vegetable Pasta

Ingredients

  • 1 (16-oz) pkg whole grain penne pasta
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 Tbsp olive oil
  • 1 (28-oz) can diced tomatoes, undrained
  • 1 (15-oz) can tomato sauce
  • ½ tsp salt
  • ½ tsp pepper
  • 2 zucchini, chopped
  • 1 (15-oz) can chickpeas, drained and rinsed
  • ½ cup whipping cream

Instructions

  1. Cook pasta according to package directions. Meanwhile, sauté onion and carrots in hot oil in a Dutch oven over medium-high heat 5 minutes or until tender; add tomatoes, tomato sauce, salt, and pepper.
  2. Cook 10 minutes or until thickened; add zucchini, chickpeas, and whipping cream. Cook 10 minutes longer or until zucchini is tender and sauce is bubbly. Serve sauce over pasta.
