15-Minute Green Goddess Panzanella

Ingredients
- 1 (14-oz) French baguette, cubed
- 2 Tbsp olive oil
- 1 pint grape tomatoes, halved
- 1 English cucumber, cut into half-moons
- 1 cup sliced red onion
- 1 cup thinly sliced roasted red peppers
- ¾ cup vegan green goddess dressing
Instructions
- Preheat broiler. Toss bread with 2 Tbsp oil; arrange on a rimmed baking sheet. Broil 3 to 4 minutes or toasted, stirring every minute.
- Toss together bread, tomatoes, cucumber, onion, and red peppers in a serving bowl; drizzle with dressing.
