Ingredients

  • 1 (14-oz) French baguette, cubed
  • 2 Tbsp olive oil
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, cut into half-moons
  • 1 cup sliced red onion
  • 1 cup thinly sliced roasted red peppers
  • ¾ cup vegan green goddess dressing

Instructions

  1. Preheat broiler. Toss bread with 2 Tbsp oil; arrange on a rimmed baking sheet. Broil 3 to 4 minutes or toasted, stirring every minute.
  2. Toss together bread, tomatoes, cucumber, onion, and red peppers in a serving bowl; drizzle with dressing.
