Peanutty Vegetable-Barley Bowls
Ingredients
- 1½ cups quick-cooking barley
- 1 (20-oz) pkg frozen broccoli and vegetable stir-fry
- 1 (15-oz) can chickpeas, drained and rinsed
- 1½ cups peanut sauce
- 1 cup roasted, salted peanuts
Instructions
- Cook barley according to package directions.
- Meanwhile, cook vegetables in a large skillet coated with cooking spray over medium-high heat 8 minutes or until browned.
- Add chickpeas, peanut sauce, and barley; cook 5 minutes or until thoroughly heated. Top with nuts.
