Peanutty Vegetable-Barley Bowls

Ingredients

  • 1½ cups quick-cooking barley
  • 1 (20-oz) pkg frozen broccoli and vegetable stir-fry
  • 1 (15-oz) can chickpeas, drained and rinsed
  • 1½ cups peanut sauce
  • 1 cup roasted, salted peanuts

Instructions

  1. Cook barley according to package directions.
  2. Meanwhile, cook vegetables in a large skillet coated with cooking spray over medium-high heat 8 minutes or until browned.
  3. Add chickpeas, peanut sauce, and barley; cook 5 minutes or until thoroughly heated. Top with nuts.
