"Sausage," White Bean, and Kale Stew

Ingredients
- 1 (12.95-oz) pkg vegan Italian sausages, cut into half moons
- 2 Tbsp olive oil
- 1 green bell pepper, chopped
- ½ onion, chopped
- 2 stalks celery, chopped
- 2 (15-oz) cans cannellini beans, drained and rinsed
- 1 (16-oz) pkg chopped kale
- 2 (32-oz) cartons vegetable broth
Instructions
- Cook sausages in hot oil in a large Dutch oven over medium-high heat 5 minutes or until browned. Remove from pot, and keep warm.
- Cook bell pepper, onion, and celery in pot 3 minutes or until tender. Return sausage to pot; add beans, kale, and broth. Bring to a boil; reduce heat, and simmer 10 minutes.
