Shrimp and Broccoli Rabe Penne

Ingredients

  • ½ cup pine nuts (or use chopped walnuts)
  • 2 lb peeled and deveined, large raw shrimp
  • ½ tsp pepper
  • 1 tsp salt, divided
  • 2 Tbsp olive oil, divided
  • 2 lb broccoli rabe, stemmed and coarsely chopped
  • 4 cloves garlic, minced
  • ½ tsp crushed red pepper
  • 2 (8.5-oz) pouches microwavable penne pasta (or use 8 oz penne pasta)
  • ½ cup shredded Parmesan cheese
  • ½ tsp lemon zest
  • 2 Tbsp lemon juice
  • 2 Tbsp butter, melted
  • 3 Tbsp chopped fresh basil

Instructions

  1. Toast nuts in a dry large nonstick skillet over medium heat until fragrant. Remove from skillet.
  2. Sprinkle shrimp with pepper and ½ tsp salt. Sauté in 1 Tbsp hot oil in skillet over medium-high heat 2 to 3 minutes or until shrimp turn pink. Remove from skillet.
  3. Add 1 Tbsp oil, broccoli rabe, garlic, and red pepper to skillet; sauté 3 to 4 minutes or until broccoli rabe is tender.
  4. Meanwhile, cook pasta according to package directions.
  5. Return shrimp to skillet. Add cheese, zest, and lemon juice to shrimp mixture; toss. Toss pasta with nuts, butter, and ½ tsp salt. Add to shrimp mixture; toss. Sprinkle with basil.
