Easy for Entertaining
Shrimp and Broccoli Rabe Penne

Ingredients
- ½ cup pine nuts (or use chopped walnuts)
- 2 lb peeled and deveined, large raw shrimp
- ½ tsp pepper
- 1 tsp salt, divided
- 2 Tbsp olive oil, divided
- 2 lb broccoli rabe, stemmed and coarsely chopped
- 4 cloves garlic, minced
- ½ tsp crushed red pepper
- 2 (8.5-oz) pouches microwavable penne pasta (or use 8 oz penne pasta)
- ½ cup shredded Parmesan cheese
- ½ tsp lemon zest
- 2 Tbsp lemon juice
- 2 Tbsp butter, melted
- 3 Tbsp chopped fresh basil
Instructions
- Toast nuts in a dry large nonstick skillet over medium heat until fragrant. Remove from skillet.
- Sprinkle shrimp with pepper and ½ tsp salt. Sauté in 1 Tbsp hot oil in skillet over medium-high heat 2 to 3 minutes or until shrimp turn pink. Remove from skillet.
- Add 1 Tbsp oil, broccoli rabe, garlic, and red pepper to skillet; sauté 3 to 4 minutes or until broccoli rabe is tender.
- Meanwhile, cook pasta according to package directions.
- Return shrimp to skillet. Add cheese, zest, and lemon juice to shrimp mixture; toss. Toss pasta with nuts, butter, and ½ tsp salt. Add to shrimp mixture; toss. Sprinkle with basil.
