Toasted Gnocchi and Vegetables

Ingredients

  • 1 (16-oz) pkg gnocchi
  • 1 (12-oz) pkg chopped broccoli, cauliflower, and carrots
  • 3 Tbsp butter, melted
  • 1 cup halved multicolored grape tomatoes
  • 1 jar pesto

Instructions

  1. Preheat oven to 450°F. Toss together gnocchi, vegetables, and melted butter on a large rimmed baking sheet; spread in a single layer. Lightly season with salt and pepper.
  2. Bake 20 minutes or until gnocchi are toasted and vegetables are browned and tender. Stir in tomatoes and desired amount of pesto; toss.
