Lemon-Pepper Grilled Chicken
Rice Pilaf and Roasted Vegetables
Ingredients
- 2 lb boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 2 Tbsp lemon-pepper seasoning
Instructions
- Preheat grill or grill pan to medium-high heat. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Brush with oil; sprinkle with lemon-pepper seasoning.
- Grill chicken, covered, 6 minutes per side or until done. Cut into bite-size pieces.

- 2 (12-oz) pkg broccoli, cauliflower, and carrots
- 2 Tbsp olive oil
- 3 (8.8-oz) pouches microwavable rice pilaf
Side Dish Instructions
- Preheat oven to 425°F. Toss together vegetables and oil on a large rimmed baking sheet; spread in a single layer. Season lightly with salt and pepper.
- Bake 15 minutes or until vegetables are browned and tender.
- Meanwhile, heat rice according to package directions.
