Lemon-Butter Pasta and Vegetables

Ingredients
- 1 (16-oz) pkg spaghetti
- ½ cup butter
- 2 zucchini, chopped
- 1 crown broccoli, cut into florets
- 1 red bell pepper, chopped
- 2 Tbsp all-purpose flour
- 1 (14.5-oz) can chicken broth
- 1 lemon
Instructions
- Cook pasta according to package directions; drain.
- Meanwhile, melt butter in a large, deep skillet over medium heat; add zucchini, broccoli, and bell pepper. Cook, stirring occasionally, 3 minutes.
- Gradually add flour, and cook, stirring constantly, 2 minutes. Gradually add broth. Bring to a boil; reduce heat, and simmer until mixture is thickened and vegetables are tender.
- Grate zest and squeeze juice from lemon. Stir lemon zest and juice into vegetables; toss with pasta.
