Garlic-Herb Surf and Turf Kabobs
Lemon Asparagus and Walnuts
Ingredients
- 2 Tbsp herb-and-garlic marinade
- 1 Tbsp olive oil
- ¾ lb sirloin steak, cubed
- 2 small red bell peppers, cut into 1-inch pieces
- ¾ lb peeled and deveined, large raw shrimp
Instructions
- Preheat grill or grill pan to medium-high heat. Whisk together marinade and oil in a large bowl. Place ½ Tbsp marinade mixture in a small bowl; reserve for basting. Add beef to marinade mixture in large bowl, tossing to coat.
- Thread beef, bell pepper, and shrimp alternately onto metal or bamboo skewers. Brush with remaining marinade mixture .
- Grill, covered, 4 minutes per side or until beef is to desired doneness.
Side Dish Ingredients
- ¼ cup chopped walnuts
- 1 lb asparagus, trimmed
- 1 Tbsp extra virgin olive oil
- 1 Tbsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat until fragrant.
- Meanwhile, steam asparagus in a steamer basket over simmering water 5 to 6 minutes or until crisp-tender.
- Toss asparagus with oil, lemon juice, salt, pepper, and nuts.
