Soy-Ginger Burgers

Ingredients

  • 2 (5.4-oz) ground beef patties
  • 2 (¼-inch-thick) pineapple rings
  • 1 Tbsp low-sodium soy sauce
  • 1½ tsp minced ginger
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • ½ green onion, chopped 

Instructions

  1. Preheat grill pan over medium-high heat. Grill patties 5 to 6 minutes per side or until no longer pink. Remove from pan .
  2. Grill pineapple 2 to 3 minutes per side or until charred.
  3. Combine soy sauce, ginger, vinegar, oil, garlic, and green onion.
  4. Top patties with pineapple rings, and drizzle with soy mixture.

Side Dish Ingredients

  • 1 Tbsp extra virgin olive oil
  • 2¼ tsp lime juice
  • ⅛ tsp honey
  • ⅛ tsp salt
  • ½ (5-oz) pkg arugula
  • ½ cup shredded carrot

Side Dish Instructions

  1. Whisk together oil, lime juice, honey, and salt in a bowl. Add arugula and carrot; toss.
