Apple-Infused Pork Roast

Garlic-Rosemary Roasted Brussels Sprouts

Ingredients

  • 3 lb boneless pork loin roast
  • 2 Tbsp almond flour
  • 2 Tbsp avocado oil
  • ½ cup organic chicken broth
  • 2 red apples, sliced (such as Gala)
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Toss pork with flour; sprinkle lightly with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned. Remove from skillet. Add broth to skillet, scraping skillet to loosen browned bits.
  2. Place apples and remaining ingredients in a 5- or 6-quart slow cooker. Place browned pork over apple mixture in cooker. Pour broth over pork.
  3. Cover and cook on LOW 8 hours or until pork is tender.

Side Dish Ingredients

  • 2 lb Brussels sprouts, halved
  • 2 Tbsp avocado oil
  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh rosemary
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together Brussels sprouts, oil, garlic, rosemary, salt, and pepper on a large rimmed baking sheet.
  2. Bake 15 to 18 minutes or until browned, stirring once.
