Indian Spice-Roasted Salmon and Okra
Almond-Cilantro Cauli-Rice
Ingredients
- 1½ tsp ground turmeric
- 1 tsp paprika
- 1 tsp garlic powder
- 1½ lb okra
- 2 Tbsp avocado oil, divided
- 2 lb salmon fillets
Instructions
- Preheat oven to 425°F. Combine turmeric, paprika, and garlic powder; divide mixture in half.
- Toss half of spice mixture with okra, 1 Tbsp oil, and desired amount of salt and pepper on a rimmed baking sheet. Bake 10 minutes or until almost crisp-tender.
- Brush fish with 1 Tbsp oil; season lightly with salt and pepper, and sprinkle with remaining half of spices.
- Add fish to baking sheet with okra. Bake 12 to 15 minutes longer or until fish flakes with a fork.
Side Dish Ingredients
- 1 (16-oz) pkg cauliflower florets (about 5½ cups)
- 1 onion, chopped
- ½ cup raw almonds, chopped
- 2 cloves garlic, minced
- ½ tsp salt
- 2 Tbsp avocado oil
- ¼ cup organic chicken broth
- ¼ cup chopped fresh cilantro
Side Dish Instructions
- Pulse cauliflower in a food processor until it resembles rice.
- Cook onion, nuts, garlic, and salt in hot oil in a large skillet over medium-high heat 5 minutes or until tender.
- Stir in cauliflower and broth; cover and cook 15 minutes or until cauliflower is tender. Stir in cilantro.
