Skillet Sausage and Bell Peppers
Riced Cauliflower and Broccoli
Ingredients
- 1 (20-oz) pkg mild Italian turkey sausage links
- 2 Tbsp olive oil
- 1 small onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 (14.5-oz) can diced tomatoes
- 2 Tbsp tomato paste
- 1 cup white wine (or use organic chicken broth)
- 2 cloves garlic, minced
Instructions
- Cook sausages in hot oil in a large, deep skillet over medium-high heat 5 minutes or until browned, turning to cook on all sides. Remove from skillet; keep warm.
- Add onion and bell peppers to skillet; sauté 5 minutes.
- Cut sausages in half, and return to skillet; add tomatoes, tomato paste, wine, and garlic. Bring to a boil; reduce heat, and simmer 15 minutes or until sauce is thickened and sausage is done.
Side Dish Ingredients
- 2 (12-oz) pkg frozen riced cauliflower and broccoli
- 2 Tbsp ghee
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cook cauliflower rice according to package directions. Stir in ghee, salt, and pepper.
