Skillet Sausage and Bell Peppers

Ingredients

  • 1 (20-oz) pkg mild Italian turkey sausage links
  • 2 Tbsp olive oil
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 (14.5-oz) can diced tomatoes
  • 2 Tbsp tomato paste
  • 1 cup white wine (or use organic chicken broth)
  • 2 cloves garlic, minced

Instructions

  1. Cook sausages in hot oil in a large, deep skillet over medium-high heat 5 minutes or until browned, turning to cook on all sides. Remove from skillet; keep warm.
  2. Add onion and bell peppers to skillet; sauté 5 minutes.
  3. Cut sausages in half, and return to skillet; add tomatoes, tomato paste, wine, and garlic. Bring to a boil; reduce heat, and simmer 15 minutes or until sauce is thickened and sausage is done.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen riced cauliflower and broccoli
  • 2 Tbsp ghee
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook cauliflower rice according to package directions. Stir in ghee, salt, and pepper.
