Grilled Chicken and Fruit Salad

Grilled Pita Wedges and Hummus

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 (10-oz) pkg organic baby spinach
  • 2 large organic nectarines, pitted and sliced (or use 2 peaches)
  • 1 (16-oz) pkg organic strawberries, sliced
  • 1 (4-oz) log goat cheese, crumbled
  • ¼ cup fresh lemon juice
  • 2 Tbsp honey
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp chopped fresh mint (optional)

Instructions

  1. Preheat grill to medium-high heat. Grill chicken, covered, 5 to 6 minutes per side or until done; let stand 5 minutes, and thinly slice.
  2. Combine spinach, nectarines, strawberries, and cheese in a bowl. Whisk together lemon juice, honey, oil, salt, pepper, and, if desired, mint.
  3. Add chicken to salad; drizzle with dressing, and toss.

Side Dish Ingredients

  • 3 (6-inch) pita bread rounds (preferably whole wheat)
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (10-oz) container classic hummus

Side Dish Instructions

  1. Preheat grill to medium-high heat. Grill pitas, covered, 1 minute per side or until grill marks appear.
  2. Combine oil and garlic; brush on pitas. Sprinkle pitas with salt and pepper. Cut or tear into serving-size pieces; serve with hummus.
