Lemon-Bacon Shrimp Sauté

Ingredients

  • 6 slices uncured bacon, chopped
  • 1½ lb peeled and deveined, large raw shrimp
  • 2 Tbsp fresh lemon juice
  • 3 Tbsp chopped fresh parsley
  • 2 cloves garlic, minced

Instructions

  1. Cook bacon in a large skillet over medium-high heat 5 to 6 minutes or until crisp. Drain, reserving drippings in skillet.
  2. Cook shrimp in hot drippings 3 to 4 minutes per side or until shrimp turn pink.
  3. Add lemon juice, bacon, parsley, and garlic; cook 1 minute. Serve over Stone-Ground Grits recipe.

Side Dish Ingredients

  • 5½ cups water
  • 1½ cups stone-ground grits
  • ¼ cup butter
  • 2½ cups shredded Cheddar cheese

Side Dish Instructions

  1. Bring water to a boil in a large saucepan. Add grits, reduce heat, and cook 40 to 50 minutes or until grits are thick and done, stirring often. Remove from heat; stir in butter and cheese until melted.
