Pancetta Pork Tenderloin
Parmesan Zucchini and Grilled Bread
Ingredients
- 1 tsp dried oregano
- 1 tsp dried basil
- ¼ tsp pepper
- 1 pork tenderloin (1 lb)
- 1½ oz thinly sliced pancetta (or use prosciutto)
Instructions
- Preheat grill to medium-high heat. Combine oregano, basil, and pepper. Rub all over pork.
- Wrap pancetta around pork. Grill 18 to 20 minutes until a meat thermometer inserted reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
Side Dish Ingredients
- 2 small zucchini, sliced lengthwise
- ½ (8-oz) French baguette, halved lengthwise
- 1 Tbsp olive oil
- ¼ cup freshly grated Parmesan cheese
- 1½ Tbsp butter, softened
- ¼ tsp dried crushed rosemary
Side Dish Instructions
- Preheat grill or grill pan to medium-high heat. Brush zucchini and bread with oil.
- Grill zucchini and bread 2 to 3 minutes per side. Toss zucchini with cheese.
- Combine butter and rosemary. Serve with bread.
