Barbecue Chicken Lettuce Wraps

Ingredients

  • 1½ lb bone-in chicken breasts, skin removed
  • ½ onion, thinly sliced
  • ½ (15-oz) can unsalted tomato sauce
  • 3 Tbsp apple cider vinegar
  • 2 Tbsp molasses
  • 1½ Tbsp maple syrup
  • 1½ tsp yellow mustard
  • ¼ tsp smoked paprika
  • 1 romaine lettuce heart, leaves separated

Instructions

  1. Place chicken in a 4- to 6-quart slow cooker; top with onion.
  2. Stir together tomato sauce, vinegar, molasses, maple syrup, mustard, and paprika in a small bowl.
  3. Pour half of mixture over chicken, stirring gently. Chill remaining sauce mixture up to 1 week.
  4. Cover chicken and cook on LOW 8 hours or until chicken is tender. Remove chicken from cooker; shred meat, discarding bones.
  5. Serve chicken in lettuce leaves. Top with Pineapple-Avocado Relish recipe; drizzle with reserved barbecue sauce.

  • ½ (16-oz) container cored pineapple, chopped
  • 1 red bell pepper, chopped
  • 1 avocado, chopped
  • 2 Tbsp chopped fresh cilantro
  • 1 Tbsp lime juice

Side Dish Instructions

  1. Stir together all ingredients in a bowl. Chill up to 1 day.
