Fiesta Chicken Salad
Ingredients
- ¼ cup plain Greek yogurt
- 2 Tbsp sour cream
- 1½ tsp lime juice
- 1 tsp ground cumin
- 1½ cups chopped rotisserie chicken
- ½ cup chopped grape tomatoes
- ½ cup corn kernels (see Note)
- ¼ red onion, diced
- 6 cups chopped romaine lettuce
- 1 avocado, sliced
- 1 Tbsp chopped fresh cilantro
Instructions
- Whisk together yogurt, sour cream, lime juice, and cumin in a bowl. Add chicken, tomatoes, corn, and onion; toss. Cover and chill 1 hour, if desired.
- Divide romaine among 3 plates; top with chicken salad, avocado, and cilantro.
