15-Minute Chicken Soft Tacos
Yellow Rice, Watermelon and Blueberries
Ingredients
- 1½ lb chicken tenderloins
- 1 Tbsp Montreal chicken seasoning
- 2 Tbsp butter
- 6 soft taco-size flour tortillas, heated
- 1½ (8-oz) pkg shredded colby-Jack cheese
Instructions
- Sprinkle chicken with seasoning. Sprinkle lightly with salt and pepper. Cook in melted butter in a large nonstick skillet over medium-high heat 10 minutes or until browned and done. Cool slightly, and finely chop chicken.
- Serve chicken on warm tortillas with cheese.
Side Dish Ingredients
- 2 (8.8-oz) pouches microwavable Spanish-style rice
- 1 (16-oz) container watermelon chunks or spears
- 1 cup blueberries
Side Dish Instructions
- Cook rice in microwave according to package directions. Season with salt to taste.
- Cut up watermelon into bite-size pieces; toss with berries.
