Toasted Gnocchi and Vegetables

Ingredients

  • 2 (16-oz) pkg gnocchi
  • 2 (12-oz) pkg chopped broccoli, cauliflower, and carrots
  • ⅓ cup butter, melted
  • 1 pint grape tomatoes, halved
  • 1 jar pesto

Instructions

  1. Preheat oven to 450°F. Toss together gnocchi, vegetables, and melted butter on a large rimmed baking sheet; spread in a single layer. Season lightly with salt and pepper.
  2. Bake 20 minutes or until gnocchi is toasted and vegetables are browned and tender. Stir in tomatoes and pesto; toss.

Side Dish Ingredients

  • ½ loaf French bread, cut in half lengthwise
  • 1 Tbsp butter, softened
  • 1 cup shredded colby-Jack cheese (or use mozzarella)

Side Dish Instructions

  1. Preheat oven to 450°F. Spread cut sides of bread with butter; sprinkle with cheese on a baking sheet.
  2. Bake 2 to 4 minutes or until toasted; slice to serve.
