Toasted Gnocchi and Vegetables
Cheese Toast
Ingredients
- 2 (16-oz) pkg gnocchi
- 2 (12-oz) pkg chopped broccoli, cauliflower, and carrots
- ⅓ cup butter, melted
- 1 pint grape tomatoes, halved
- 1 jar pesto
Instructions
- Preheat oven to 450°F. Toss together gnocchi, vegetables, and melted butter on a large rimmed baking sheet; spread in a single layer. Season lightly with salt and pepper.
- Bake 20 minutes or until gnocchi is toasted and vegetables are browned and tender. Stir in tomatoes and pesto; toss.
Side Dish Ingredients
- ½ loaf French bread, cut in half lengthwise
- 1 Tbsp butter, softened
- 1 cup shredded colby-Jack cheese (or use mozzarella)
Side Dish Instructions
- Preheat oven to 450°F. Spread cut sides of bread with butter; sprinkle with cheese on a baking sheet.
- Bake 2 to 4 minutes or until toasted; slice to serve.
