Petite Green Peas with Shallots

Ingredients

  • 1½ lb ground beef
  • ¾ cup chopped onion
  • ⅓ cup quick-cooking oats
  • ½ green bell pepper, finely chopped
  • 1½ tsp Worcestershire sauce
  • ¾ tsp dried thyme
  • ¾ tsp salt, divided 
  • 2 large eggs, lightly beaten
  • 1 Tbsp butter 
  • 2 Tbsp all-purpose flour
  • 1 cup low-sodium beef broth 

Instructions

  1. Preheat oven to 350°F. Combine beef, onion, oats, bell pepper, Worcestershire sauce, thyme, ½ tsp salt, and eggs in a large bowl. Press mixture into a lightly greased 9- x 5-inch loaf pan.
  2. Bake 50 to 55 minutes or until a meat thermometer inserted in center reads 165°F.
  3. Meanwhile, melt butter in a saucepan over low heat. Sprinkle with flour; cook 1 minute or until blended. Gradually whisk in broth and ¼ tsp salt; cook 2 to 3 minutes or until smooth and thickened, stirring constantly.
  4. Let meat loaf stand 10 minutes before slicing; serve with gravy.

  • 1 shallot, finely chopped
  • 1 Tbsp olive oil
  • 1 (16-oz) pkg frozen petite peas
  • ½ cup low-sodium chicken broth
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp chopped fresh basil

Side Dish Instructions

  1. Sauté shallot in hot oil in a saucepan over medium heat 1 minute or until tender.
  2. Add peas, broth, salt, and pepper to pan; cover and simmer 5 minutes or until peas are tender.
  3. Stir in basil just before serving.
