Mom's Meat Loaf
Petite Green Peas with ShallotsIngredients
- 1½ lb ground beef
- ¾ cup chopped onion
- ⅓ cup quick-cooking oats
- ½ green bell pepper, finely chopped
- 1½ tsp Worcestershire sauce
- ¾ tsp dried thyme
- ¾ tsp salt, divided
- 2 large eggs, lightly beaten
- 1 Tbsp butter
- 2 Tbsp all-purpose flour
- 1 cup low-sodium beef broth
Instructions
- Preheat oven to 350°F. Combine beef, onion, oats, bell pepper, Worcestershire sauce, thyme, ½ tsp salt, and eggs in a large bowl. Press mixture into a lightly greased 9- x 5-inch loaf pan.
- Bake 50 to 55 minutes or until a meat thermometer inserted in center reads 165°F.
- Meanwhile, melt butter in a saucepan over low heat. Sprinkle with flour; cook 1 minute or until blended. Gradually whisk in broth and ¼ tsp salt; cook 2 to 3 minutes or until smooth and thickened, stirring constantly.
- Let meat loaf stand 10 minutes before slicing; serve with gravy.

- 1 shallot, finely chopped
- 1 Tbsp olive oil
- 1 (16-oz) pkg frozen petite peas
- ½ cup low-sodium chicken broth
- ½ tsp salt
- ¼ tsp pepper
- 1 Tbsp chopped fresh basil
Side Dish Instructions
- Sauté shallot in hot oil in a saucepan over medium heat 1 minute or until tender.
- Add peas, broth, salt, and pepper to pan; cover and simmer 5 minutes or until peas are tender.
- Stir in basil just before serving.
