Parsley-Garlic Roasted Chicken
Couscous with Butternut SquashIngredients
- ¼ cup butter, softened
- ¼ cup finely chopped fresh parsley
- ½ tsp salt
- ½ tsp pepper
- 3 cloves garlic, minced
- 6 (6-oz) boneless, skinless chicken breasts
Instructions
- Preheat oven to 425°F. Combine butter, parsley, salt, pepper, and garlic; rub on chicken on a greased rimmed baking sheet.
- Roast 15 to 18 minutes or until chicken is done.

- 1¼ cups whole wheat Israeli (pearl) couscous
- 1 (10-oz) pkg frozen cubed butternut squash
- ¼ cup chopped fresh parsley
- 2 Tbsp olive oil
- ½ tsp salt
Side Dish Instructions
- Cook couscous and squash according to package directions.
- Toss together couscous, squash, parsley, oil, and salt in a bowl.
