Parsley-Garlic Roasted Chicken

Ingredients

  • ¼ cup butter, softened
  • ¼ cup finely chopped fresh parsley
  • ½ tsp salt
  • ½ tsp pepper
  • 3 cloves garlic, minced
  • 6 (6-oz) boneless, skinless chicken breasts

Instructions

  1. Preheat oven to 425°F. Combine butter, parsley, salt, pepper, and garlic; rub on chicken on a greased rimmed baking sheet.
  2. Roast 15 to 18 minutes or until chicken is done.

  • 1¼ cups whole wheat Israeli (pearl) couscous
  • 1 (10-oz) pkg frozen cubed butternut squash
  • ¼ cup chopped fresh parsley
  • 2 Tbsp olive oil
  • ½ tsp salt

Side Dish Instructions

  1. Cook couscous and squash according to package directions.
  2. Toss together couscous, squash, parsley, oil, and salt in a bowl.
