Tuna and White Bean Lettuce Cups
Ingredients
- 1 Tbsp extra virgin olive oil
- 2 tsp red wine vinegar
- 1 tsp Dijon mustard
- 1 (15-oz) can cannellini beans, drained and rinsed
- 1 (5-oz) can albacore tuna in water, drained
- ½ cup grape tomatoes, halved
- ⅓ cup coarsely chopped green olives
- 1 green onion, thinly sliced
- ½ small head Bibb lettuce, separated into leaves
Instructions
- Whisk together oil, vinegar, and mustard in a large bowl. Add beans, tuna, tomatoes, olives, and onions; toss. Season with salt and pepper to taste. Serve salad in lettuce leaves.
