Tuna and White Bean Lettuce Cups

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 2 tsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 1 (5-oz) can albacore tuna in water, drained
  • ½ cup grape tomatoes, halved
  • ⅓ cup coarsely chopped green olives
  • 1 green onion, thinly sliced
  • ½ small head Bibb lettuce, separated into leaves

Instructions

  1. Whisk together oil, vinegar, and mustard in a large bowl. Add beans, tuna, tomatoes, olives, and onions; toss. Season with salt and pepper to taste. Serve salad in lettuce leaves.
