Beef Enchilada Casserole
Southwest Salad and Chips and Salsa
Ingredients
- 1 lb ground beef (or use ground turkey)
- 1 (10-oz) can red enchilada sauce
- ½ (8-oz) block cream cheese, softened
- 9 corn tortillas
- 1 (15-oz) can refried beans
- 1⅓ cups shredded Mexican-blend cheese, divided
Instructions
- Preheat oven to 400°F. Cook beef in a large nonstick skillet over medium heat until browned and crumbly. Add half of enchilada sauce and cream cheese; stir until blended.
- Arrange 3 tortillas in a greased small baking dish, tearing to fit if necessary; top with one-third of beef mixture, one-third of beans, and ⅓ cup cheese. Repeat layers twice.
- Top with remaining enchilada sauce; sprinkle with ⅓ cup cheese. Bake 15 minutes or until cheese is melted.

- 1 (10.5-oz) pkg Southwest salad kit
- ½ (10-oz) pkg tortilla chips
- ½ (16-oz) jar salsa
Side Dish Instructions
- Prepare salad according to package directions, chopping lettuce into bite-size pieces, if desired.
- Serve a small handful of chips and a spoonful of salsa on each plate.
