Strawberry-Basil “Nice” Cream

Ingredients

  • 3 cups unsweetened vanilla almond milk
  • 1 (13.5-ounce) can coconut milk
  • 1 (16-ounce) package unsweetened frozen whole strawberries (about 3 cups)
  • ½ cup pure maple syrup or honey 
  • 3 Tbsp lemon juice 
  • ¼ cup packed fresh basil leaves
  • ⅛ tsp kosher salt

Instructions

  1. Place the almond milk, coconut milk, strawberries, maple syrup, lemon juice, basil, and salt in a blender; blend until smooth, about 2 minutes.
  2. Transfer the mixture to a 11⁄2-quart electric ice cream maker and churn according to the manufacturer’s instructions.
  3. Transfer to an airtight container; freeze until firm, about 3 hours .
