Edamame and Feta Pasta
Spicy CucumbersIngredients
- 4 oz whole-grain penne pasta
- ¾ cup frozen shelled edamame
- 2 Roma tomatoes, chopped
- ¼ cup chopped fresh mint
- 2 Tbsp finely chopped red onion
- 1 Tbsp extra virgin olive oil
- 1 tsp lemon zest
- 1 Tbsp lemon juice
- ¼ tsp salt
- Black pepper to taste
- ¼ cup crumbled reduced-fat feta cheese
Instructions
- Cook pasta according to package directions, adding edamame during last 3 minutes of cooking; drain, and toss pasta with tomatoes and remaining ingredients.
Side Dish Ingredients
- 1 English cucumber, thinly sliced
- 1 jalapeño, minced
- 1½ tsp extra virgin olive oil
- 1½ tsp red wine vinegar
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a serving bowl.
