Edamame and Feta Pasta

Ingredients

  • 4 oz whole-grain penne pasta
  • ¾ cup frozen shelled edamame
  • 2 Roma tomatoes, chopped
  • ¼ cup chopped fresh mint
  • 2 Tbsp finely chopped red onion
  • 1 Tbsp extra virgin olive oil
  • 1 tsp lemon zest
  • 1 Tbsp lemon juice
  • ¼ tsp salt
  • Black pepper to taste
  • ¼ cup crumbled reduced-fat feta cheese

Instructions

  1. Cook pasta according to package directions, adding edamame during last 3 minutes of cooking; drain, and toss pasta with tomatoes and remaining ingredients.

Side Dish Ingredients

  • 1 English cucumber, thinly sliced
  • 1 jalapeño, minced
  • 1½ tsp extra virgin olive oil
  • 1½ tsp red wine vinegar
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a serving bowl.
