Ingredients

  • 2 (4-oz) boneless center-cut loin pork chops
  • ½ tsp curry powder
  • ¼ tsp ground cumin
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Sprinkle pork with curry powder, cumin, salt, and pepper. Cook pork in a large nonstick skillet coated in cooking spray over medium heat 4 minutes per side or until done.

  • 1 (12-oz) pkg green beans
  • 1 tsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup crumbled reduced-fat blue cheese
  • 2 cups sliced peaches
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Cook green beans according to package directions; toss with oil, salt, and pepper. Sprinkle with cheese.
  2. Gently toss together peaches and lemon juice in a serving bowl. Serve green beans and peaches alongside pork.
