Curry Pork Chops
Blue Cheese Green Beans and Sliced Peaches
Ingredients
- 2 (4-oz) boneless center-cut loin pork chops
- ½ tsp curry powder
- ¼ tsp ground cumin
- ⅛ tsp salt
- ⅛ tsp pepper
Instructions
- Sprinkle pork with curry powder, cumin, salt, and pepper. Cook pork in a large nonstick skillet coated in cooking spray over medium heat 4 minutes per side or until done.

- 1 (12-oz) pkg green beans
- 1 tsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup crumbled reduced-fat blue cheese
- 2 cups sliced peaches
- 1 Tbsp lemon juice
Side Dish Instructions
- Cook green beans according to package directions; toss with oil, salt, and pepper. Sprinkle with cheese.
- Gently toss together peaches and lemon juice in a serving bowl. Serve green beans and peaches alongside pork.
