Cumin-Paprika Pork Tenderloin

Warm Kale and Apple Salad

Ingredients

  • 1 pork tenderloin (1 lb)
  • 1 Tbsp Montreal steak seasoning
  • ½ tsp ground cumin
  • ¼ tsp smoked paprika (or use regular)
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 425°F. Rub pork with Montreal seasoning, cumin, and paprika.
  2. Brown pork in hot oil on all sides in a large cast-iron or an ovenproof skillet over medium-high heat 5 minutes.
  3. Transfer skillet to oven. Bake 15 minutes or until pork is done; let rest 5 minutes before slicing.

Side Dish Ingredients

  • 1½ Honeycrisp apples, sliced 
  • ½ small onion, sliced
  • 1½ tsp olive oil
  • ½ (12-oz) pkg chopped kale
  • 1 Tbsp apple cider vinegar
  • 1½ tsp butter
  • ⅛ tsp salt
  • ¼ cup crumbled feta cheese (or use goat cheese)
  • ¼ cup chopped walnuts

Side Dish Instructions

  1. Cook apples and onion in hot oil in a Dutch oven over medium-high heat 5 minutes or until tender.
  2. Stir in kale, vinegar, butter, and salt. Cook 2 to 3 minutes or until kale is tender and deep green in color. Divide among 3 plates. Sprinkle with cheese and nuts.
