Greek Chicken Burgers

Ingredients

  • ½ lb ground chicken
  • ¼ cup whole wheat panko breadcrumbs
  • 2 Tbsp finely chopped red onion
  • 1 large egg, lightly beaten
  • 1 Tbsp chopped fresh dill
  • ½ tsp dried oregano
  • ½ tsp garlic powder
  • 2 hamburger buns (preferably whole wheat)
  • ½ tomato, sliced
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat grill or grill pan to medium-high heat. Gently mix together chicken, breadcrumbs, onion, egg, dill, oregano, and garlic powder using your hands.
  2. Shape mixture into 2 patties. Grill patties, uncovered, 5 to 6 minutes per side or until centers are no longer pink.
  3. Serve burgers on buns with tomato, Tzatziki Sauce recipe, and cheese.

Side Dish Ingredients

  • ½ lemon
  • ½ large English cucumber, coarsely chopped
  • ½ cup plain Greek yogurt
  • ¼ cup chopped fresh dill
  • 1 clove garlic, minced
  • 1 (6-inch) pita bread round (preferably whole wheat), cut into triangles
  • 1 large organic bell pepper (any color), sliced

Side Dish Instructions

  1. Grate zest from lemon to equal ¼ tsp; squeeze juice equal to 1 Tbsp. Combine cucumber, yogurt, dill, garlic, lemon juice, and zest in a bowl.
  2. Serve prepared sauce on burgers and with pita bread and bell pepper.
