Shrimp and Sausage Creole
Roasted Okra
Ingredients
- ¾ cup long-grain brown rice
- 1 (8-oz) pkg natural, uncured turkey or chicken sausage links, halved lengthwise and sliced
- ½ onion, chopped
- ½ organic green bell pepper, diced
- 1 Tbsp olive oil
- ½ (14.5-oz) can no-salt-added diced tomatoes, undrained
- 2 cloves garlic, minced
- ½ tsp salt-free Cajun seasoning
- ½ lb peeled and deveined, wild-caught raw shrimp, thawed
Instructions
- Cook rice according to package directions.
- Sauté sausage, onion, and bell pepper in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender.
- Add tomatoes, garlic, and Cajun seasoning. Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes. Stir in shrimp. Cook 5 minutes or until shrimp turn pink. Serve over rice.

- ½ lb okra, trimmed
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 450°F. Toss okra with oil, salt, and pepper; arrange in a single layer on a greased rimmed baking sheet. Bake 10 to 15 minutes or until browned.
