Shrimp and Sausage Creole

Ingredients

  • ¾ cup long-grain brown rice
  • 1 (8-oz) pkg natural, uncured turkey or chicken sausage links, halved lengthwise and sliced
  • ½ onion, chopped
  • ½ organic green bell pepper, diced
  • 1 Tbsp olive oil
  • ½ (14.5-oz) can no-salt-added diced tomatoes, undrained
  • 2 cloves garlic, minced
  • ½ tsp salt-free Cajun seasoning
  • ½ lb peeled and deveined, wild-caught raw shrimp, thawed

Instructions

  1. Cook rice according to package directions.
  2. Sauté sausage, onion, and bell pepper in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender.
  3. Add tomatoes, garlic, and Cajun seasoning. Bring to a boil; reduce heat, and simmer, uncovered, 5 minutes. Stir in shrimp. Cook 5 minutes or until shrimp turn pink. Serve over rice.

  • ½ lb okra, trimmed
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss okra with oil, salt, and pepper; arrange in a single layer on a greased rimmed baking sheet. Bake 10 to 15 minutes or until browned.
